Prepare the cauliflower rice by grating the cauliflower or pulsing it in a food processor until it resembles rice.
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the cauliflower rice and sauté for 5-7 minutes until tender. Season with salt and pepper to taste.
In another skillet, heat 1 tablespoon of olive oil over medium heat. Add the canned black beans and cumin, cooking for 5 minutes until heated through.
Assemble the bowls by placing a serving of cauliflower rice in each bowl, then top with black beans, diced bell peppers, and fresh arugula.
Drizzle with lime juice and top with avocado slices. Serve immediately or store for meal prep.
