Preheat the oven to 180°C (350°F) and grease a muffin tin.
In a large bowl, combine the leftover turkey, stuffing, beaten eggs, and chopped herbs until well mixed.
Spoon the mixture into the greased muffin tin, filling each cup about 0.75 full.
Bake in the preheated oven for about 25 minutes or until the muffins are set and lightly browned on top.
Let them cool for a few minutes before carefully removing them from the tin. Serve warm or at room temperature.
