A quick and flavorful tofu stir-fry featuring crisp sugar snap peas and colorful bell peppers, infused with ginger and lime.

Press the tofu to remove excess moisture, then cube it into bite-sized pieces.
In a bowl, mix soy sauce and lime juice. Add cubed tofu and marinate for 10 minutes.
Heat 1 tablespoon of vegetable oil in a large pan over medium-high heat. Add the marinated tofu and cook until golden and crispy on all sides. Remove and set aside.
Add another tablespoon of vegetable oil to the pan. Add minced ginger and sliced bell peppers. Stir-fry for 2 minutes.
Add sugar snap peas to the pan and continue to stir-fry for about 3 more minutes until vegetables are crisp-tender.
Return the tofu to the pan and toss everything together. Adjust seasoning with soy sauce and lime juice to taste.
Serve hot, garnished with sesame seeds and sliced green onions if desired.
