In a skillet, heat 1 tablespoon of butter over medium heat. Add 500g of diced chicken breast and cook until browned and cooked through, about 10-12 minutes.
Add 1 tablespoon of chili powder, 1 teaspoon of cumin, and salt to taste to the chicken. Stir to coat the chicken evenly and cook for an additional 2-3 minutes.
In a separate pan, prepare the cauliflower rice according to package instructions, or grate fresh cauliflower and sauté in a little butter for 5-7 minutes until tender.
To assemble the bowls, start with a base of cauliflower rice, add the seasoned chicken on top, sprinkle with 100g of shredded cheddar cheese, and finish with a squeeze of lime juice.
