Preheat your oven to 150°C (300°F).
Render the beef fat in a large oven-safe pot over medium-low heat until it's melted and clear, about 20 minutes. Remove and reserve the crispy cracklings.
Season the beef brisket with salt and pepper. Sear it in the rendered tallow on both sides until browned, about 5 minutes per side.
Add beef bones to the pot along with 2 cups of water. Cover the pot with a lid and place it in the preheated oven.
Cook the brisket for 3 to 4 hours, or until it is tender and easily pulls apart.
Once cooked, remove the brisket from the pot and let it rest for 10 minutes before slicing.
Strain the cooking liquid and refrigerate until the fat solidifies. Remove the fat and cut the gelatin into cubes.
Portion the sliced brisket, crispy cracklings, and gelatin cubes into meal prep containers.
Store in the refrigerator or freeze for later use. Reheat portions as needed, ensuring brisket stays moist.
