Oven-baked sweet potatoes stuffed with a savory mixture of black beans and corn, packed with plant protein and flavor.

Preheat the oven to 400°F (200°C).
Pierce sweet potatoes several times with a fork, then bake in the oven for 30 minutes or until tender.
While the sweet potatoes are baking, in a bowl, combine black beans, corn, cilantro, and chipotle seasoning.
Once the sweet potatoes are cooked, remove them from the oven and let them cool slightly.
Carefully cut the sweet potatoes in half lengthwise and scoop out a bit of the flesh to create room for the filling.
Mix the scooped sweet potato flesh into the black bean and corn mixture, then fill each sweet potato half with the mixture.
Return the stuffed sweet potatoes to the oven and bake for an additional 10 minutes.
Serve warm, garnished with additional cilantro if desired.
