A flavorful and healthy stir fry featuring spiralized zucchini noodles, chicken, broccoli, and red bell peppers tossed in a homemade sesame-ginger sauce.

Spiralize the zucchini into noodles and set aside.
In a bowl, mix together soy sauce, sesame oil, ginger, garlic, and honey to make the sauce.
Heat half of the olive oil in a large pan over medium-high heat. Add diced chicken and cook until browned and cooked through, about 6-8 minutes. Remove from the pan and set aside.
In the same pan, add remaining olive oil, broccoli, and red bell pepper. Stir fry for 4-5 minutes until vegetables are tender-crisp.
Add the chicken back to the pan, then pour in the sesame-ginger sauce. Toss to coat everything evenly.
Add the spiralized zucchini noodles to the pan and toss quickly for 1-2 minutes until just tender. Do not overcook the zucchini to prevent it from becoming soggy.
Serve immediately, garnished with chopped green onions and sesame seeds if desired.
