Cook the brown rice according to package instructions. Set aside.
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, about 5-7 minutes, breaking it apart with a spatula.
Stir in the cumin, chili powder, salt, and pepper to the beef. Cook for another 2 minutes until spices are fragrant.
Add the black beans and roasted red peppers to the skillet with the beef. Stir to combine and cook for an additional 5 minutes. Remove from heat.
In a small bowl, mix the Greek yogurt, chopped cilantro, lime juice, and a pinch of salt to make the cilantro sauce.
To assemble the bowls, divide the cooked brown rice among four bowls. Top each with the beef and black bean mixture.
