Cook the jasmine rice according to package instructions and let it cool completely. Ideally, use day-old rice for best texture.
Heat 2 tablespoons of butter in a large pan over medium heat. Add the garlic and sauté until golden brown and fragrant.
Add the cooked jasmine rice to the pan and stir well to combine with the garlic. Cook for 5-7 minutes, stirring occasionally.
In a separate pan, cook the bacon until crispy. Remove from the pan and chop into small pieces.
Add the chopped bacon to the rice and mix well.
In the same pan used for the bacon, scramble the eggs and cook until just set. Add to the rice and stir to incorporate.
Season the rice with salt and black pepper to taste.
Garnish with sliced scallions before serving.
