A simplified version of the iconic Filipino stew using beef chuck, peanut butter, and vegetables.

Heat 1 tablespoon of oil in a large pot over medium heat. Add the onion and garlic, sautéing until the onion is translucent.
Add the beef chuck pieces to the pot and brown on all sides, about 5 minutes.
Pour in the beef broth and bring to a boil. Reduce the heat to low and let it simmer for 40 minutes, or until the beef is tender.
In a small bowl, mix the peanut butter with a bit of hot broth from the pot to thin it out, then stir the mixture back into the pot.
Add the eggplant, green beans, and bok choy to the stew. Cook for another 10-15 minutes, or until the vegetables are cooked to your liking.
Season with salt and pepper to taste before serving.
