In a medium-sized bowl, combine shrimp with cumin, chili powder, garlic powder, lime juice, salt, and pepper. Toss well to coat the shrimp evenly.
Heat olive oil in a skillet over medium-high heat. Add the seasoned shrimp to the skillet and cook for 2-3 minutes per side until pink and cooked through. Remove from heat and set aside.
In a separate bowl, combine diced mango, red onion, jalapeño, cilantro, lime juice, salt, and pepper. Stir well to mix all the ingredients together. Set aside.
Warm the tortillas in a dry skillet or microwave according to package instructions.
Assemble the tacos by placing a few cooked shrimp in each tortilla. Top with a spoonful of mango salsa and any optional toppings such as sliced avocado, shredded lettuce, sour cream, or hot sauce.
