A quick and easy Chinese-American fried rice featuring shrimp, garlic, and ginger in a sweet-savory soy glaze.

Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.
Add 300 grams of shrimp and stir-fry for 2-3 minutes until opaque and cooked through. Remove shrimp from the skillet and set aside.
In the same skillet, add another tablespoon of oil and stir-fry 2 cloves of minced garlic and 1 teaspoon of minced ginger for 30 seconds.
Add 4 cups of cooked rice to the skillet and stir-fry for 3-4 minutes until heated through.
In a small bowl, mix 3 tablespoons of soy sauce and 1 tablespoon of sesame oil, then pour it over the rice.
Add the cooked shrimp back into the skillet along with 1 cup of frozen peas and carrots, stir to combine, and cook for another 2-3 minutes.
