In a large skillet, heat 1 tablespoon of oil over medium-high heat. Add sliced bell peppers and onions, and cook until softened and slightly charred, about 5 minutes.
Season the vegetables with 1 teaspoon of chili powder, 0.5 teaspoon of cumin, and salt to taste. Stir and cook for an additional minute.
Add 500 grams of shrimp to the skillet and cook until they are pink and opaque, about 3-4 minutes. Squeeze the juice of 1 lime over the shrimp and stir to combine.
Warm tortillas in a separate pan or microwave. Serve shrimp and vegetables in tortillas, topped with shredded cheddar cheese.
