Preheat the oven to 200 degrees Celsius.
On a large sheet pan, add 500g of sliced bratwurst and 300g of baby potatoes cut in half.
Add 200g of chopped bell pepper and 200g of Brussels sprouts to the pan.
Drizzle with 2 tablespoons of olive oil and season with 1 teaspoon of black pepper and 1 teaspoon of Cajun seasoning. Toss everything together until well coated.
Spread the mixture in an even layer on the sheet pan.
Bake in the preheated oven for 25 minutes, or until the sausage is cooked through and the vegetables are tender and golden.
