Heat a large skillet over medium heat and add 2 tablespoons of olive oil.
Add 1.1 pounds of pork sausage to the skillet and cook until browned, about 5 minutes, turning occasionally.
Remove the sausage from the skillet and set aside. In the same skillet, add sliced bell peppers and cook for 5 minutes until softened.
Add minced garlic and cook for an additional 1 minute until fragrant.
Return the sausage to the skillet and stir in 1 can of diced tomatoes, seasoning with 1 teaspoon of salt and 1 teaspoon of black pepper to taste.
