Heat a large skillet over medium heat and add olive oil.
Add the sliced Italian sausages to the skillet and cook until browned, about 8 minutes, stirring occasionally.
Remove the sausages from the skillet and set aside.
In the same skillet, add the sliced onions and bell peppers. Cook until they start to soften, about 5 minutes.
Add the minced garlic and continue cooking for another 2 minutes, stirring frequently.
Return the sausages to the skillet and mix with the vegetables.
Season with salt, black pepper, and Italian seasoning. Stir well to combine.
