Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit).
Season the salmon fillets with salt and pepper, then place them on a baking sheet lined with parchment paper.
In a small bowl, mix together olive oil, minced garlic, lemon juice, and chopped basil. Brush this mixture over the salmon fillets.
Bake the salmon in the preheated oven for 15-20 minutes or until cooked through.
Meanwhile, cook the couscous according to package instructions. Fluff with a fork once done.
In a separate pan, sauté diced bell pepper and canned diced tomatoes in a little olive oil until softened, around 5 minutes.
Combine the cooked couscous with the sautéed vegetables and season with salt, pepper, and oregano.
Serve the salmon on a bed of the couscous and vegetable mixture. Drizzle with additional lemon juice if desired.
