A hearty Southern stew with sausage, perfect for a weeknight meal. Serve with crusty bread or over mashed potatoes.

In a large pot, heat 1 tablespoon of oil over medium heat. Add 400 grams of sausage and cook until browned on all sides, about 10 minutes. Remove sausage and set aside.
In the same pot, add 1 medium diced onion, 1 diced bell pepper, and 2 minced cloves of garlic. Sauté until softened, about 5 minutes.
Add 1 can of diced tomatoes (about 400 grams), 1 cup of cooked black beans, 1 teaspoon of cumin, 1 teaspoon of chili powder, and the browned sausage back to the pot. Stir to combine.
Pour in 4 cups of water and bring to a simmer. Cover and cook on low for 30 minutes, stirring occasionally.
Serve over cooked rice or with crusty bread.
