Preheat the oven to 200°C (400°F).
Cut the potatoes into bite-sized pieces and place them in a bowl. Add olive oil, salt, and black pepper, then toss to coat.
Spread the potatoes on a baking sheet and roast them in the oven for 20-25 minutes or until golden and tender, stirring halfway through.
While the potatoes are roasting, season the pork chops with salt and black pepper.
In a skillet over medium heat, add a tablespoon of butter and cook the pork chops for 6-7 minutes on each side, or until they reach an internal temperature of 63°C (145°F).
While the pork chops are cooking, steam the broccoli until tender, about 5-7 minutes.
Once everything is cooked, serve the pork chops with roasted potatoes and steamed broccoli on the side.
