Cut the chicken breast into bite-sized pieces and season with salt and pepper.
In a large skillet or wok, heat 2 tablespoons of oil over high heat. Add the chicken pieces and stir-fry until golden brown and cooked through, about 7-10 minutes.
In a small bowl, mix together the soy sauce, orange juice, minced garlic, minced ginger, and a tablespoon of sugar to create the glaze.
Pour the orange glaze over the cooked chicken in the skillet and stir well to coat. Cook for an additional 3-5 minutes until the sauce thickens slightly.
Serve the orange chicken over steamed rice and garnish with sliced scallions and a sprinkle of sesame seeds.
