Rinse the lentils under cold water and combine them with 1 liter of water in a pot. Bring to a boil, then reduce heat and simmer for 15 minutes.
In a separate large pot, cook 1 tablespoon of butter over medium heat. Add the sliced onions and cook, stirring frequently, until they are deeply caramelized, about 15-20 minutes.
Once the lentils are cooked, add the brown rice to the pot with lentils, along with 2 cups of water, cumin, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until the rice is tender and water is absorbed.
