Preheat the oven to 200°C (392°F).
Heat 1 tablespoon olive oil in a skillet over medium heat. Add the ground lamb and sauté until browned, about 5 minutes.
Add cumin, coriander, and salt to the lamb and cook for another 2 minutes. Remove from heat.
Place the flatbreads on a baking sheet. Spread 0.5 cup hummus evenly over each flatbread.
Top each flatbread with the spiced lamb, spreading it evenly.
Bake the flatbreads in the preheated oven for 10-12 minutes until the edges are crispy.
Remove from the oven and sprinkle with chopped mint and parsley.
Drizzle each flatbread with 1 tablespoon of yogurt before serving.
