Preheat the oven to 375°F (190°C).
Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers in a baking dish.
In a medium bowl, mix together the cooked rice, black beans, corn, cilantro, lime juice, chili powder, cumin, salt, and pepper.
Stuff each bell pepper with the rice mixture, pressing down gently to pack it in.
Top each stuffed pepper with shredded pepper jack cheese.
Cover the baking dish with foil and bake in the preheated oven for 25 minutes.
Remove the foil and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
Let the stuffed peppers cool slightly before serving.
