Preheat the grill to medium-high heat.
In a bowl, mix olive oil, lemon juice, oregano, thyme, salt, and black pepper.
Brush the fish fillets and shrimp with the olive oil mixture. Let them marinate for 10 minutes.
Place the fish fillets and shrimp on the grill. Cook the fish for about 5-7 minutes per side, or until it flakes easily. Cook the shrimp for 2-3 minutes per side, until they are opaque.
Toss the bell peppers and zucchini with the remaining olive oil mixture. Grill them for 5-7 minutes, turning occasionally, until they are tender and have grill marks.
Arrange the grilled fish, shrimp, and vegetables on a serving board. Garnish with lemon wedges and fresh parsley.
