A delicious and healthy Mediterranean-inspired hummus bowl topped with grilled chicken, fresh vegetables, and a squeeze of lemon.

In a medium bowl, mix 1 tablespoon of olive oil, lemon juice, garlic, salt, and black pepper. Add the chicken breast pieces and marinate for 10 minutes.
Preheat the grill to medium-high heat. Grill the chicken breasts for 5-7 minutes on each side or until fully cooked and the internal temperature reaches 75°C. Remove from the grill and let rest.
In the meantime, toss the bell peppers and zucchini slices with 1 tablespoon of olive oil, salt, and black pepper. Grill the vegetables for 4-5 minutes on each side until tender and slightly charred.
To assemble the bowls, spread 0.5 cup of hummus on the bottom of each serving bowl.
Slice the grilled chicken and arrange it on top of the hummus in each bowl along with the grilled vegetables.
Top with cherry tomatoes, cucumber slices, and a sprinkle of feta cheese. Garnish with chopped parsley.
Serve with a lemon wedge on the side for an extra squeeze of freshness.
