A delicious Mediterranean bowl featuring grilled chicken, fresh cucumbers, tomatoes, and a tangy yogurt sauce, served over a bed of grains.

Preheat a grill or grill pan over medium-high heat.
In a bowl, combine olive oil, lemon juice, oregano, salt, and black pepper. Add chicken breasts and marinate for 15 minutes.
While the chicken is marinating, cook the grains according to package instructions.
Once the grill is hot, grill the chicken for about 6-7 minutes per side, or until cooked through. Remove from grill and let rest for a few minutes before slicing.
In a separate bowl, mix diced cucumbers, tomatoes, and chopped chives. Season with a little salt and pepper.
To make the yogurt sauce, combine Greek yogurt, lemon juice, and a pinch of salt in a small bowl.
To assemble the bowls, place a serving of grains at the bottom, top with sliced chicken, cucumber and tomato mixture, and drizzle with yogurt sauce.
