A simple pressure cooker chicken and rice meal designed for low FODMAP diets. Features tender chicken, jasmine rice, and gut-friendly seasonings for quick and satisfying weeknight dinners.

Set the Instant Pot to sauté mode and add olive oil.
Season chicken breast with salt and black pepper.
Add chicken to the pot and sear on each side for 2-3 minutes until golden. Remove and set aside.
Add the chopped green tops of scallions to the pot and sauté for 1 minute.
Add jasmine rice, stirring to coat with the oil and scallions.
Pour in chicken broth and stir, scraping any browned bits from the bottom of the pot.
Return chicken pieces to the pot, placing them on top of the rice.
Secure the lid and set the Instant Pot to pressure cook on high for 10 minutes.
Allow natural pressure release for 10 minutes, then manually release any remaining pressure.
Open the lid, fluff the rice with a fork, and serve hot.
