In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 chopped bell pepper and 1 chopped carrot, cooking until softened, about 5 minutes.
Stir in 1 cup of cooked black lentils and 1 can of canned diced tomatoes (about 400 g), along with 2 tablespoons of tomato paste and 1 tablespoon of chili powder. Mix well and let it simmer for about 10 minutes.
Season with salt and pepper to taste. Serve the lentil mixture on burger buns and top with fresh arugula if desired.
