Preheat the oven to 375°F (190°C).
Cut the tops off the bell peppers and remove the seeds and membranes. Arrange them in a baking dish.
In a large bowl, mix the cooked lentils, diced tomatoes, diced onions, minced garlic, cumin, paprika, salt, and black pepper.
Spoon the lentil mixture into each bell pepper, filling them generously.
Cover the baking dish with foil and bake for 25 minutes.
Remove the foil and bake for an additional 5 minutes to slightly roast the tops.
Remove from the oven and let cool slightly before serving.
