In a small bowl, mix together the melted butter, lemon juice, and black pepper.
Brush the lemon butter mixture over the salmon fillets.
Preheat the air fryer to 200 degrees Celsius (400 degrees Fahrenheit).
Place the salmon fillets in the air fryer basket and cook for 10-12 minutes until cooked through.
While the salmon is cooking, rinse the rice under cold water until the water runs clear.
In a saucepan, add the rice, 2 cups of water, and a pinch of salt. Bring to a boil.
Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the water is absorbed and the rice is fluffy.
Serve the salmon over the rice, drizzling any leftover lemon butter sauce on top.
