Soak the glass noodles in hot water for about 20 minutes until they soften, then drain and set aside.
In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add 500g of sliced beef and stir-fry until browned, about 5-7 minutes.
Add 2 cloves of minced garlic, 1 tablespoon of gochujang, and 2 tablespoons of soy sauce to the beef, and stir to combine. Cook for an additional 2 minutes.
Add 1 cup of sliced bell peppers, 1 cup of sliced carrots, and 1 cup of sliced broccoli to the skillet. Stir-fry for another 5 minutes until the vegetables are tender.
Add the softened glass noodles to the skillet and toss everything together. Drizzle with an additional tablespoon of sesame oil, and mix well. Cook for another 2 minutes to heat through.
Garnish with 0.25 cup of chopped scallions before serving.
