Turn the Instant Pot to the sauté mode. Add 2 tablespoons of butter and let it melt.
Add 500 g of sliced beef to the pot and brown it on all sides, about 5 minutes.
Stir in 2 cups of chopped carrots and 2 cups of chopped potatoes, cooking for an additional 3 minutes.
Add 1 can of diced tomatoes, 2 cups of beef broth, 1 teaspoon of black pepper, and 1 teaspoon of salt. Stir well.
Seal the Instant Pot lid and cook on high pressure for 25 minutes.
Once done, carefully release the pressure and open the lid. Stir the stew and adjust seasoning if needed.
Serve hot with crusty bread or over mashed potatoes.
