In a large bowl, combine ground turkey, sage, thyme, garlic powder, salt, and black pepper. Mix thoroughly until well blended.
Divide the mixture into 8 equal portions and shape each portion into a patty about 1.5 cm thick.
Heat olive oil in a large skillet over medium heat.
Add the turkey patties to the skillet, cooking them for 5-7 minutes on each side or until the internal temperature reaches 74 C and they are browned.
While the patties are cooking, prepare your side. For sautéed spinach, heat olive oil in a separate pan, add baby spinach, and sauté until wilted. For roasted sweet potatoes, preheat oven to 200 C, toss sweet potato cubes with olive oil, salt, and pepper, and roast for 20 minutes until tender.
Serve the cooked turkey patties with your chosen side.
