In a medium saucepan over medium heat, warm the Guinness stout until it is just simmering.
Gradually add the shredded Dubliner cheese and sharp cheddar cheese to the saucepan, stirring constantly until the cheese is completely melted and smooth.
Add garlic and lemon juice to the mixture and continue stirring until well combined.
Season the fondue with salt and black pepper to taste.
Transfer the cheese fondue to a fondue pot to keep it warm and serve with your choice of dippers.
