In a large bowl, combine the ground chicken, grated carrots, grated zucchini, bread crumbs or oat flour, and egg. Mix well until all ingredients are fully incorporated.
Using your hands, shape the mixture into small patties, about 0.5 inches thick.
Heat olive oil in a large skillet over medium heat. Add the patties to the skillet and cook for about 4-5 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the patties are golden brown.
Remove the patties from the skillet and let them rest for a few minutes. Serve warm, adjusting the size of the patties as needed for serving to children.
