In a skillet over medium heat, add 1 tablespoon of oil and heat until shimmering.
Add 500 g of ground beef to the skillet. Cook, breaking it apart with a spatula, until browned, about 5-7 minutes.
Stir in 1 teaspoon of chili powder, 0.5 teaspoon of cumin, and salt to taste. Cook for an additional 2-3 minutes until the spices are fragrant.
While the beef is cooking, prepare the salsa by chopping 1 cup of cherry tomatoes and mixing them with 0.25 cup of chopped cilantro, 1 tablespoon of lime juice, and salt to taste in a bowl.
Warm 8 hardshell tacos in the oven according to package instructions.
Assemble the tacos by spooning the cooked beef into each shell, topping with fresh salsa, and sprinkling 1 cup of shredded cheddar cheese on top.
