Protein-packed grilled patties made from lupini beans with Mediterranean herbs and spices.

Drain and rinse the lupini beans thoroughly.
In a food processor, combine lupini beans, onion, garlic, parsley, cumin, coriander, lemon juice, and olive oil. Pulse until the mixture is well combined but still slightly chunky.
Transfer the mixture to a bowl and stir in breadcrumbs and salt. Mix until the ingredients are well incorporated.
Form the mixture into patties, about 2.5 cm thick.
Preheat a grill or grill pan over medium heat. Lightly oil the grill or pan.
Grill the patties for about 4-5 minutes on each side, or until golden brown and heated through.
Serve the patties warm with your choice of sides or in a bun as a burger alternative.
