Cook the Asian noodles according to package instructions. Drain and set aside.
In a large skillet or wok, heat 2 tablespoons of oil over medium-high heat. Add the cooked chicken breast and stir-fry until cooked through, about 5 minutes.
Add the bell peppers and cook for another 3 minutes until they are slightly tender.
Stir in the cooked noodles, fish sauce, lime juice, and cayenne pepper. Toss everything together for 2-3 minutes until well combined.
