Cook the noodles according to package instructions, then drain and set aside.
In a pan over medium heat, add 1 tablespoon of butter and cook the ground beef until browned, about 5-7 minutes.
Add 1 tablespoon of chili powder, 1 teaspoon of cumin, and season with salt and black pepper to taste. Mix well and cook for another 2 minutes.
In a separate bowl, whisk together 4 tablespoons of soy sauce, 2 tablespoons of almond milk, and 2 tablespoons of peanut butter until smooth.
Combine the cooked noodles with the sauce and toss until well coated. Serve in bowls topped with the ground beef mixture and garnish with chopped cilantro.
