Preheat the oven to 230°C (450°F).
Heat 1 tablespoon of olive oil in a pan over medium heat, add lamb mince, and cook until browned. Add curry powder, stir well, and cook for another 2 minutes. Remove from heat and set aside.
In the same pan, add another tablespoon of olive oil and onion slices. Cook over low heat until caramelized, about 10-15 minutes.
Roll out the pizza dough on a floured surface to your desired thickness and transfer it to a pizza baking tray.
Spread the cooked lamb mixture evenly over the pizza base, followed by caramelized onions, and crumble feta cheese on top.
Bake in the oven for 12-15 minutes or until the crust is golden and crispy.
Remove from the oven, and sprinkle fresh mint leaves over the top. Slice and serve hot.
