A flavorful Cuban dish featuring pork marinated in a citrus-garlic mixture and roasted to perfection.

In a bowl, combine the juice of 2 grapefruits, 0.5 cup of olive oil, 0.5 cup of chopped garlic, 1 tablespoon of cumin, and 1 teaspoon of black pepper. Mix well to create the marinade.
Place 1.5 pounds of pork in a large zip-top bag or bowl and pour the marinade over the pork. Seal and refrigerate for at least 1 hour, preferably overnight.
Preheat the oven to 220 degrees Celsius (425 degrees Fahrenheit). Remove the pork from the marinade and place it on a roasting pan.
Roast the pork for 45-60 minutes or until the internal temperature reaches 70 degrees Celsius (160 degrees Fahrenheit) and the edges are caramelized.
Let the pork rest for 10 minutes before slicing. Serve with your choice of sides.
