Preheat the air fryer to 180°C (356°F).
Wash and thinly slice the zucchini into even slices about 0.25 cm thick.
In a large bowl, combine the zucchini slices with lemon zest, black pepper, and a sprinkle of parmesan cheese. Toss until evenly coated.
Place the zucchini slices in a single layer in the air fryer basket. Work in batches if necessary to avoid overcrowding.
Air fry the zucchini slices for about 15-20 minutes or until they are golden brown and crispy. Check halfway through cooking and shake the basket to ensure even crispiness.
