Slice the onions into 0.5 inch thick rings and separate them.
In a large bowl, mix together the all-purpose flour, cornstarch, baking powder, paprika, garlic powder, salt, and black pepper.
Gradually whisk in the Guinness beer until the batter is smooth and slightly thick.
Heat the vegetable oil in a deep fryer or large pot to 180°C.
Dip each onion ring into the batter, allowing excess batter to drip off, and carefully place into the hot oil.
Fry the onion rings in batches for 3 to 4 minutes, turning occasionally, until golden brown.
Remove the onion rings from the oil and place on paper towels to drain excess oil. Season with additional salt if desired.
In a small bowl, mix together mayonnaise, ketchup, and hot sauce to make the dipping sauce.
Serve the crispy onion rings hot with the dipping sauce on the side.
