Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Reserve 0.5 cup of pasta water, then drain the pasta.
In a large pan over medium heat, add olive oil. Add the garlic and sauté for about 1 minute until fragrant.
Add the sun-dried tomatoes to the pan and cook for another 2 minutes.
Add the cooked pasta, hummus, and reserved pasta water to the pan, stirring well to combine and create a creamy sauce.
Stir in the baby spinach and cook for 1-2 minutes until wilted.
Season the pasta with salt and black pepper to taste. Serve immediately, garnished with basil leaves if desired.
