Rinse 2 cups of rice under cold water until the water runs clear. Cook the rice according to the package instructions.
While the rice is cooking, heat 1 tablespoon of vegetable oil in a large pan over medium heat. Add the sliced onions and cook for 5-7 minutes until they are caramelized and golden brown. Remove and set aside.
In the same pan, add another tablespoon of vegetable oil and increase the heat to medium-high. Add the thinly sliced beef and cook for 2-3 minutes until browned.
Return the onions to the pan with the beef. Add soy sauce, mirin, sake, and sugar, and stir to combine. Bring the mixture to a simmer and let it cook for 5-7 minutes until the sauce slightly thickens.
Preheat your oven to broil. Divide the cooked rice into four bowls. Spoon the beef and onion mixture over the rice.
Top each bowl with a mixture of shredded mozzarella and cheddar cheese. Place the bowls on a baking sheet and broil in the oven for 2-3 minutes until the cheese is melted and bubbly.
Serve immediately, garnished with sliced green onions if desired.
