In a bowl, combine the shrimp with lime juice, chili powder, cumin, and a pinch of salt. Let it marinate for 10 minutes.
While the shrimp is marinating, cook the rice according to package instructions.
In a large skillet over medium heat, add olive oil and sauté the shrimp for about 3-4 minutes until they are pink and cooked through. Remove from heat.
In the same skillet, add chopped bell pepper and broccoli. Sauté for 3-5 minutes until the vegetables are tender.
To assemble the bowls, place cooked rice at the bottom, top with sautéed vegetables, and then add the chili lime shrimp. Garnish with fresh cilantro if desired.
