In a large pot, combine 1 liter of water, 2 tablespoons of soy sauce, 1 tablespoon of mirin, and 1 teaspoon of grated ginger. Bring to a simmer.
Add 500 grams of chicken breast to the pot and cook for about 15 minutes, or until the chicken is cooked through. Remove the chicken and let it rest.
While the chicken rests, add 200 grams of Asian noodles to the pot and cook according to package instructions.
Slice the cooked chicken into thin pieces and return to the pot along with any juices. Stir to combine.
Serve the ramen in bowls, garnished with sliced green onions and a sprinkle of black pepper if desired.
