Preheat the oven to 200 degrees Celsius.
In a shallow dish, combine 0.5 cup of grated parmesan cheese and 0.5 cup of breadcrumbs. Season with salt and pepper to taste.
Dip each chicken breast into 0.25 cup of melted butter, then coat with the parmesan-breadcrumb mixture.
Place the coated chicken breasts on a baking sheet and bake in the preheated oven for 20 minutes or until golden brown and cooked through.
While the chicken is baking, warm 1 cup of marinara sauce in a saucepan over medium heat.
Once the chicken is cooked, remove from the oven and spoon marinara sauce over each piece, then top with 1 cup of shredded mozzarella cheese.
Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
Slice the sub rolls in half, place a piece of chicken on each roll, drizzle with more marinara, and serve hot.
