Preheat the grill or a grill pan over medium heat.
Season the chicken breasts with salt and pepper. Grill for about 6-7 minutes on each side, or until the chicken is cooked through and has nice grill marks. Let rest for 5 minutes before slicing.
In a large bowl, combine the arugula, sliced tomatoes, and sliced mozzarella.
In a small bowl, whisk together the olive oil and balsamic vinegar. Season with a pinch of salt and pepper to taste.
Slice the grilled chicken and add it to the salad mixture. Drizzle with the dressing and toss gently to combine.
