Preheat the oven to 200 degrees Celsius.
Cut the cauliflower head into 4 thick slices, keeping the core intact to hold the pieces together.
Brush both sides of the cauliflower steaks with olive oil and season with salt and black pepper.
Place the cauliflower steaks on a baking sheet and roast in the oven for 25 to 30 minutes, flipping halfway through, until they are golden brown and tender.
While the cauliflower is roasting, prepare the herb sauce. In a small bowl, mix together chopped parsley, lemon juice, minced garlic, and olive oil. Season with salt and black pepper to taste.
Once the cauliflower steaks are done, drizzle the herb sauce over the steaks and serve immediately.
